Mini Banana Pancakes
- 1 Banana
- 2 Pace Farm Eggs
- Peel and mash the banana in a mixing bowl.
- Crack in 2 eggs and whisk to combine.
- Melt a teaspoon of butter in a large non-stick frying pan over medium heat, then use a tablespoon to spoon the mixture into mini pancakes.
- Cook until the edges are brown, then carefully flip and cook on the other side.
- Stack on a plate and serve with your choice of maple syrup or caramel sauce.
