Fresh egg white mix
Our fresh pasteurised egg white mix is ideal for use in pavlova manufacture with the addition of gums to assist with stabilisation. It is also extremely useful as a binding agent in small goods.
Applications
For use by manufacturers of pavlovas nougats, meringues, confectionary and glazed pastries. Also, as a binder in small goods which need just the egg white and no yolk.

Packaging
Fresh egg white mix is available in 10kg cartons utilising the “bag in a box” system. This consists of a durable outer carton with strong resealable inner bag.
Storage
The product should be refrigerated between 0°C and 5°C.
Shelf Life
50 days shelf life from date of manufacture if stored as recommended. Once bag is opened shelf life is six days.
Shell Egg Equivalent
1kg of fresh egg white mix is approximately equivalent to the egg whites separated from 30 medium sized eggs.
Pallet Quantity
84 x 10kg cartons per pallet.
Availability
- Available in bulk pallecons containing approximately 1,000kg or 10kg ‘bag in box’ cartons.
- Available as Cage Free.
