2 cups flour
1 teaspoon extra virgin olive oil
4 whole Pace Farm eggs, plus 2 yolks
Place the flour onto a clean surface and create a well in the middle.
Add the salt and olive oil to the centre of the well.
Whisk the eggs together in a bowl and gradually adding in one third and then another third leaving the last of the mixture to the side.
Allow the eggs to soak into the flour mixing it in gently.
Create another well in the centre of the mixture and add the rest of the egg combining together to create a crumb-like dough.
Flour your hands and form a ball out of the fully combined mixture.
Continue to knead and twist the ball for approximately 10 minutes until it is elastic and firm.
Allow resting for 20 minutes.
Roll out the sheet of dough and cut into desired shapes.
Fresh pasta cooks super quick so as soon as it rises in the pot of boiling water it is ready.
