Christmas Pavlova

Keep it classic this Christmas with this Aussie icon. Easy and quick to make all you’ll need is a carton of our Pace Farm eggs and some juicy fruits to decorate, you can go berrylicious or zesty or go all-fancy with salted caramel, Oreos or crushed chocolate and dulce de leche.

Ingredients Method
  • 4 Pace Farm egg whites
  • 1 cup caster sugar
  • 1 tsp lemon juice
  • 2 tsp corn flour
  1. Beat the egg whites with an electric mixer until soft peaks form.
  2. Sift the corn flour and add the lemon juice and sugar. Beat for 10 minutes until hard and glossy.
  3. Place baking paper onto a baking tray.
  4. Place the meringue onto the paper forming it into the shape of a circle with a slight hollow in the centre.
  5. Bake for 1 hour and 30 mins at 130 ºC until the outside is crisp.
  6. Leave to cool.
  7. Use fruit and cream to decorate, you can pick from berries, passionfruit, mango, or try a fancier version with caramel sauce and crushed biscuits.
