6 Pace Farm eggs
6 egg whites
1/3 cup milk
1½ cups sweet potato, diced
1 tsp olive oil
4 cups spinach, chopped
1 garlic clove
1/16 tsp. nutmeg
Salt and pepper
1 tbsp fresh green onions, (optional)
Preheat the oven to 200°C. Spray a muffin tin with cooking spray or use lining paper.
Whisk together the eggs, egg whites, milk, and green onions. Season with salt and pepper.
In a skillet, heat the olive oil over medium heat. Add the sweet potato and cook for 8 minutes or until softened.
Add the garlic, spinach, and nutmeg. Cook for 2 more minutes or until wilted.
Allow to cool for 2 minutes and then mix into eggs. Pour into muffin tin and bake for 20 minutes or until cooked through.
