The best dishes are the ones that you can share with your family like this mushroom and capsicum frittata.
6 Pace Farm eggs
4 mushrooms, sliced
¼ capsicum diced
½ onion, sliced
1 tbsp olive oil
½ cup milk
1 tbsp feta, crumbled
Salt and Pepper
Sprinkle of herbs
Sprinkle of garlic powder
Preheat oven to 180C
In a non-stick frypan, heat olive oil and cook onion, capsicum for 5-7 mins until soft. Add sliced mushrooms, dried herbs and garlic powder and stir fry for 3-4 minutes.
Spray cooking oil onto a small ovenproof dish. Place onion mixture into the dish.
In a bowl, mix 6 eggs, salt and pepper and milk and whisk. Pour over mixture in dish.
Bake for 20 minutes or until cooked through
Cut and serve onto a plate, and top it with cheese (optional).
