This month, we’re heading to La Favola – an intimate neighbourhood restaurant bringing the flavours and traditions of Italy to Sydney’s inner-west.  

Located in the bustling suburb of Newtown, La Favola, meaning ‘the fable’, has earned a reputation for serving authentic Italian dishes inspired by family recipes and made with exceptional produce. 

Head chef Fabio Stefanelli grew up in the Italian region of Campania, where his love for cooking grew from watching his parents in the kitchen. Fabio started his Diploma of Hospitality at just 14, before travelling across Europe and working in Michelin-starred restaurants. He later settled in Australia and opened La Favola in 2017.  

The restaurant is a culmination of Fabio’s childhood memories. Its menu brings together his favourite family recipes, served in a relaxed setting where warm hospitality and carefully sourced ingredients take centre stage. 

Beyond the restaurant, La Favola also hosts Italian cooking classes, bringing people together to roll fresh pasta, master classic recipes and experience the traditions at the heart of Italian cooking. 

Pace Farm’s Eggs Worth a Visit pick is the Spaghetti Carbonara. Fresh pasta, made using egg yolks and semolina, is tossed through a rich sauce of eggs, crispy pancetta, black pepper and pecorino cheese. It is a classic Roman dish built around a handful of simple ingredients, allowing every element to shine.  

For Fabio, Pace Farm Eggs are the key to creating an authentic carbonara sauce. The heat from the freshly cooked pasta gently transforms the eggs into a smooth velvety sauce, while the crispy pancetta adds a deep, salty flavour without overpowering the dish.
