This May, we’re heading to Sydney for a dessert that has captured global attention: the now famous Japonaise cake from Du Plessy Pralin & Otello.

After sharing a video online, queues quickly formed outside the West Pymble patisserie. What was once a modest weekly seller soon became a daily sell-out, drawing visitors from across Australia and even overseas, simply to experience a slice.

The Japonaise cake is a beautifully balanced creation: Layers of almond and hazelnut meringue filled with an airy dark chocolate mousse, made using Pace Farm’s Egg White Products, which when whipped, delivers volume and holds its shape. Finished with delicate rosella birds dusted in cocoa, it’s as visually striking as it is indulgent.
